    Pour 40g of water to wet the coffee evenly and let it bloom, allowing carbon dioxide gas to escape.
  2. First Pour (40s) · 120g
    Pour 120g of water in a spiral motion from the center outward to draw out the coffee's sweetness.
  3. Second Pour (40s) · 140g
    Pour the remaining 140g of water in the same manner to adjust body, balance, and determine the final strength.
  4. Drawdown (40s)
    Wait for the water to drain completely, leaving a flat coffee bed, to complete the extraction.
