Tetsu Kasuya's Devil Switch Recipe

This Hario Switch 02 recipe uses 20g of coffee and 280g of water, splitting the brew between a 90°C open-valve percolation and a 70°C closed-valve immersion. Prepare both water temperatures before starting so the transition is immediate and repeatable, and let the hot percolation phase drain fully before closing the valve. If sweetness is muted, refine your grind size before raising the cooler immersion temperature.
